Fruit and Yogurt Parfaits

Homemade granola adds crunch between the creamy yogurt layers. Use different fruit in season for the best flavour year round. Blueberries, strawberries and apple are a great combination. These parfaits are great for breakfast, snack or fancy enough for dessert. Try 4 to 6 individual servings in parfait glasses for another alternative.

2 cups large flake oats
½ cup wheat germ
1/3 cup wheat bran
¼ cup slivered almonds
¼ cup shelled unsalted sunflower seeds
2 tbsp sugar substitute
1 tbsp canola oil
1 tbsp water
2 tsp grated orange rind
1 tsp vanilla extract
Pinch salt
½ cup raisins or dried cranberries
1 tub (750 g) non-fat, fruit flavoured yogurt with sweetener
2 cups chopped fresh fruit or berries

  1. In large bowl, toss together oats, wheat germ and bran, almonds and sunflower seeds.
  2. In small bowl, whisk together sugar substitute, oil, water, orange rind, vanilla and salt. Pour over oat mixture and toss well to coat evenly. Spread mixture onto large parchment paper lined baking sheet and bake in 300 F oven for about 30 minutes, stirring once or until golden brown. Let cool completely. Add raisins.
  3. In a 6 cup glass bowl or dish, layer 1 cup of the yogurt then half of the granola. Repeat once and top with remaining yogurt and sprinkle top with fruit.

Makes 6 servings.

Storage:     Cover and refrigerate for up to 2 days. As the parfait sits the granola softens.

Granola Storage: Keep in resealable plastic bag or airtight container at room temperature for up to 3 days.

Yogurt Cheese Option: You can use sweetened yogurt cheese in place of the yogurt if desired.
